WHEN KNOWLEDGE BECOMES PASSION
Sven Mostegl, internationally known as “Sven the Baker”, is booked by hotels, bakeries, industrial companies and event organisers as a consultant, speaker and workshop leader. His daily fees can rise well beyond US$7,500. But the number tells only part of the story. Because when you work with Sven Mostegl, you are not simply buying a day. You are gaining access to 40 years of experience – and an energy capable of taking entire teams with him.
There are consultants who explain.
There are speakers who inspire.
There are practitioners who do.
And then there are people in whom these worlds come together.
Sven Mostegl is one of them.
For exactly 40 years, the German professional baker has worked with bread, baking and food.
But to describe him today simply as a baker would tell only part of the story.
He develops products. He analyses industrial processes. He works with hotels and bakeries. He advises companies in the food industry, machinery and baking technology. He trains teams. He develops unique selling propositions. He delivers workshops, masterclasses, specialist presentations and keynotes.
And over the years, other subjects have become an increasingly important part of his work and his speaking: fermentation, nutrition, the microbiome, performance and quality of life.
In between, he still works with dough himself.
Perhaps that is the point.
Mostegl is not particularly interested in discussing what might work in theory. He wants to know whether it works.
40 YEARS CANNOT BE BOUGHT IN A DAY
When a company books Sven Mostegl for a consulting day, it is not hiring a man for eight hours.
It is buying access to four decades of experience.
And that experience was not built in one place.
Mostegl began working internationally very early in his career. While others accumulated their experience over many years within one company or one market, he travelled the world – wherever products were being developed, production systems established, technical challenges solved and new solutions needed.
Europe.
The Middle East.
Asia.
North America.
Individual journeys became decades of international practice.
Mostegl encountered different raw materials, production environments, technologies, markets and corporate cultures.
Most importantly, he encountered people.
He learned early that a solution that works perfectly in Germany will not automatically be the right solution in Dubai, Riyadh or somewhere else in the world.
That experience shaped an approach that still defines his work today:
Do not arrive with a ready-made answer. Understand first. Then build the solution.
His 40 years are therefore not simply 40 years of baking.
They are made up of countries, companies, production halls, bakeries, hotels, machines, ingredients and people.
Successes.
And mistakes that somebody else no longer has to make.
He looks at a product like a baker.
At its economics like an entrepreneur.
At its process like a technician.
And increasingly, at the bigger picture through his long-standing engagement with fermentation, food, the microbiome, human performance and quality of life.
That is why a seemingly simple assignment – Make our bread better – can quickly become a much bigger question:
What does this company need to look like tomorrow if its products are still to matter tomorrow?
WHAT DOES IT COST TO WORK WITH SVEN MOSTEGL?

There is no simple price list.
His fees depend on the company, the complexity of the assignment, the responsibility involved, the scope and the result expected.
For larger companies, complex development assignments and industrial projects, his daily fees can rise well beyond US$7,500.
Keynotes and speaking engagements are structured separately, as are workshops, product development programmes and longer-term industrial and consulting mandates.
There is, however, one exception to the usual commercial logic.
For selected projects, companies or visions that Mostegl personally believes in and genuinely wants to be part of, an engagement may occasionally be structured from around US$3,500 per day, plus travel, accommodation and project-related expenses.
The important word is selected.
Because for Mostegl, passion has always been part of the equation.
Anyone who has spent time discussing a subject with him quickly encounters it.
Energy.
When something excites him, a conversation changes.
A question becomes an idea.
An idea becomes a plan.
And a plan can, remarkably quickly, become a product, a process or an entirely new direction.
That energy does not stay with him.
It spreads.
To bakers.
To developers.
To employees.
To management.
To entire teams.
Mostegl does not walk into a company to tell people everything they have been doing wrong for years.
He wants to make them believe in what could come next.
He discusses. Tests. Rejects. Starts again.
He wants people to challenge him. He wants employees to think for themselves.
And above all, he wants a team to understand why something works.
Perhaps that is one reason why individual assignments so often develop into longer projects and lasting relationships.
You book knowledge.
And passion comes with it.
“When something really excites me, I don’t start by calculating how many hours it will take,” Mostegl says. “I want to know what we can make out of it.”
In the end, however, there has to be a result.
A better product.
A more stable process.
A genuine point of difference.
A team that understands why it is doing something differently.
Or an idea that previously existed only on paper and suddenly works in the real world.
Forty years of experience cannot be caught up.
But for a while, you can bring those 40 years to your own table.
WHEN AN ASSIGNMENT BECOMES A LONG-TERM CONNECTION [H2]
Riyadh is a good example.
Since 2018, Mostegl’s work has regularly taken him to the Four Seasons Hotel Riyadh at Kingdom Centre.
For Elements Artisanal Bakery, he developed products and concepts, worked with the team on quality, fermentation and processes, and trained employees.
What began as an individual project developed over the years into a professional relationship and connection that remains one of the important international references of his work.
Projects like this reveal what matters to Mostegl.
It is not enough for a product to work while Sven is standing next to it.
It has to work when he is already back on a plane.
“If a company has to keep calling me after I leave, I haven’t done my job well enough,” he says.
His objective is knowledge transfer.
The company should be stronger afterwards than it was before.
WHERE CRAFT MEETS INDUSTRY

Anyone who associates Sven Mostegl only with a small romantic artisan bakery is missing a major part of his work.
Industry.
Mostegl is not afraid of large production volumes or modern technology.
Quite the opposite.
For him, the machine has never been the enemy of a good product.
A lack of understanding is.
Bad processes are.
And shortcuts that destroy quality are.
As an international consultant to bakeries, food companies and manufacturers of machinery and baking technology, Mostegl works deep inside industrial processes.
Recipes.
Raw materials.
Fermentation.
Production reliability.
Consistency.
Technology.
Energy.
People.
Cost.
And eventually, the same question always returns:
Why should a customer choose this product rather than somebody else’s?
Mostegl sees enormous potential particularly in traditional German companies.
Many possess decades of knowledge, excellent employees and outstanding products.
What is sometimes missing is not tradition.
It is the next step.
His job is not to throw history away.
It is to translate that history into the 21st century.
For Mostegl, tradition and innovation are not opposites.
The real skill lies in combining the two to create something competitors cannot simply reproduce.
A BRAND AMBASSADOR WHO ALSO SAYS NO

His relationships with brands follow a similarly simple principle.
Mostegl has to believe in them himself.
A partnership does not work for him simply because a company wants a recognised name or a familiar face.
He has to want to use the product.
He has to be able to stand behind the technology.
He has to believe in the idea.
And every new partnership must fit with the companies and institutions with which he is already associated.
That is why he chooses carefully which brands he represents as an ambassador or partner.
DEBAG Global Baking Technology is one of those close relationships.
At iba, the world’s leading trade fair for the baking industry, Sven the Baker appeared with DEBAG and presented the iba-Revolution Loaf – bringing together traditional baking, fermentation and modern nutritional thinking.
But another relationship runs even deeper.
It leads to Sharjah.
SABAA SANABEL: WHEN WHEAT GROWS IN THE DESERT

To understand why Sven Mostegl speaks with such emotion about the United Arab Emirates, travel to Mleiha in the Emirate of Sharjah.
Wheat grows there.
In the desert.
What initially sounds almost contradictory is part of the extraordinary vision of His Highness Sheikh Dr Sultan bin Muhammad Al Qasimi, Supreme Council Member and Ruler of Sharjah.
It is a vision that brings together agriculture, science, food security, sustainability and the ambition to provide people with high-quality, natural food.
From that vision came Sabaa Sanabel – Seven Spikes, Sharjah’s wheat project.
Its continued development is supported by the Sharjah Department of Agriculture and Livestock and EKTIFA, the Sharjah Agricultural and Livestock Production Establishment, led by Dr Eng Khalifa Musabah Al Tunaiji, CEO of EKTIFA.
For Mostegl, his connection with Sabaa Sanabel is therefore far more than another project.
Here, many of the things he believes in come together.
Raw materials.
Origin.
Science.
Quality.
Fermentation.
Health.
Sustainability.
And responsibility for the next generation.
The wheat grown in Mleiha has attracted attention for its exceptional quality characteristics and particularly high protein content.
Mostegl’s work begins where the grain becomes food.
What can this wheat do?
How does it behave in dough?
What changes through long fermentation?
How can it become bread worthy of an exceptional raw material?
And how can that knowledge be communicated internationally?
“I don’t grow this wheat,” Mostegl says. “I have the privilege of showing what it can become.”
Perhaps no other project describes his relationship with the United Arab Emirates quite so well.
A German baker arrives in this country 23 years ago.
He builds his life here.
His family.
His businesses.
His international career.
And years later, he has the privilege of helping to make a vision from Sharjah visible – and something people can actually taste.
The United Arab Emirates gave Sven Mostegl an opportunity. Today, he tries to give something back for that trust.
DUBAI: WHERE IDEAS HAVE TO BECOME REALITY

Dubai is his centre.
Sven Mostegl has lived and worked in the United Arab Emirates for 23 years.
And his Baker’s Kitchen in Dubai remains far more than an address.
It is a bakery.
A restaurant.
A development space.
A testing ground.
And sometimes a laboratory.
Here, ideas have to pass an uncomfortably honest test:
Will somebody buy it?
Does a recipe work not just once, but every morning?
Can another employee reproduce it?
Does it make commercial sense?
Does the customer understand the difference?
Will that customer come back?
This daily reality is what separates Mostegl’s work from conventional consulting.
He does not know production problems only from presentations.
He knows them at five in the morning.
He knows staff shortages.
Variations in raw materials.
Costs.
Customers who loved something yesterday and want something different today.
And the simple truth that the greatest idea in the world is worthless if it does not work in daily operation.
FERMENTATION, NUTRITION AND THE MICROBIOME: IT STOPPED BEING ONLY ABOUT BREAD A LONG TIME AGO

Perhaps this is the biggest evolution in his work.
For more than two decades, Mostegl has intensively explored nutrition and human performance. His interest in nutrition began considerably earlier and developed over decades alongside his professional work with food and fermentation.
Today, those worlds meet.
Forty years of working with food.
Decades of experience with fermentation.
Nutrition.
The microbiome.
Movement and performance.
And the question of what the food we consume every day does to our quality of life.
These subjects increasingly form part of his books, keynotes, presentations and educational work.
They do not replace his core work in professional baking, fermentation, product development and industry.
They expand the questions he asks.
His book “Der Tod sitzt mit am Tisch” deliberately goes far beyond bread.
The question is no longer simply:
What makes good bread?
It has become:
What is the food we eat every day doing to us?
And this is where all the different parts of his work meet again.
The baker understands the raw material.
The fermentation expert understands the process.
The entrepreneur understands reality.
And the speaker turns it into a story people can understand.
SVEN MOSTEGL ON TELEVISION: FROM “GOODBYE DEUTSCHLAND” TO “ÜBERMORGENLAND”

Millions of people across the German-speaking world first came to know Sven Mostegl through an entirely different medium.
Television.
Over the years, television cameras have followed him, his family, his businesses and his life in the United Arab Emirates.
Several editions of the VOX television programme “Goodbye Deutschland” told parts of his story.
One of the larger productions was the VOX documentary “Übermorgenland – Deutsche Träume in den Emiraten”.
Mostegl and his family were among the protagonists in a story about Germans who live, work and build businesses in the United Arab Emirates.
It was about entrepreneurship.
Family.
Risk.
Opportunity.
Failure.
Starting again.
And about a country that has transformed itself within a few decades at extraordinary speed.
Mostegl has also appeared in “Kai reist” and other television formats.
Alongside television came profiles, interviews and reports in German-speaking and international media as well as specialist publications.
The stories often begin with a baker.
But within a few minutes, they usually become about something much bigger.
About a German who found a second home in the Emirates.
An entrepreneur.
A father.
Someone who knows what it means to fall down and get back up.
And someone who, after 40 years in his profession, remains curious enough to question what he already knows.
AN INTERNATIONAL SPEAKER: THE STAGE BECAME BIGGER

Eventually, the bakery was no longer the only stage.
At Expo 2020 Dubai, Mostegl spoke at the German Pavilion.
At iba, the world’s leading trade fair for the baking industry, he stood both at the oven and on stage.
At the Akademie Deutsches Bäckerhandwerk Weinheim, he addressed a specialist audience.
International presentations, workshops, masterclasses, corporate events and live baking demonstrations followed.
But Mostegl is not a speaker who stopped doing the work he speaks about.
Perhaps that is part of his impact.
When he talks about dough, there is a good chance he has made it himself.
When he talks about business, he has built and run businesses himself.
When he talks about employees, he has built teams himself.
When he talks about failure, he knows that too.
And when he talks about starting again, he knows that as well.
His two books, “Die Brot-Revolution” and “Der Tod sitzt mit am Tisch”, reached number one across a combined five Amazon categories.
In 2026, MDL Magazin named him “Health Author of the Year” for his work as an author.
The boy who first stood in his father’s bakery at the age of eight became an internationally active author, speaker and consultant.
Yet perhaps his greatest strength has remained surprisingly simple:
He can still become genuinely excited about an idea.
WHAT REMAINS WHEN SVEN LEAVES?

In the end, perhaps this is the wrong question:
What does a day with Sven Mostegl cost?
The better question is:
What remains from that day?
Can the team do it again tomorrow?
Has the company developed a product that is not simply interchangeable?
Was the problem understood – or merely repaired for a day?
Has tradition become a future?
Has an idea become a product?
Has a product become a genuine competitive advantage?
Has a group of employees become a team that suddenly wants to change something?
Perhaps this is the part of Mostegl’s work that is hardest to put on an invoice.
He brings knowledge.
Forty years of it.
But people who have worked with him also experience something else.
His energy.
His speed.
The passion with which a problem suddenly becomes a challenge people actually want to solve.
Not everyone needs Sven Mostegl.
And not every project interests Sven Mostegl.
But when the two fit together, something often happens that is difficult to capture in a proposal:
You book knowledge. You get experience. And the passion comes with it.
