In Episode 2 of Lost Recipes of India, we travel to Odisha to rediscover Dalma, a wholesome lentil and vegetable dish that’s deeply connected to Odia culture and the traditions of Lord Jagannath.
But this isn’t the Dalma you’ll usually find.
Together with food storyteller Biswajit, we cook Dalma using indigenous vegetables that are slowly disappearing from our kitchens – Manja (banana stem), Palua (arrowroot).
India is losing hundreds of traditional recipes every generation. Through Lost Recipes of India, we’re travelling across the country to document, preserve and celebrate these forgotten culinary treasures.
