FIRST LOOK: Chef Justin James opens Restaurant Aptos after two years of ambition, emotion and culinary obsession

One of the most anticipated and ambitious Adelaide openings of the past few years is finally upon us. Restaurant Aptos is letting us through the towering doors to its transformed 157-year-old church turned restaurant.

Behind the epic multi-dimensional restaurant is chef Justin James, who says early signs suggest Aptos could become one of the top restaurants worldwide.

The feedback has already been huge. James said trial dinners brought a mix of people close to him, and people he’d never met, so as to properly gauge the reaction.

“It was off the charts,” he said. “Feedback is that it could be Australia’s best restaurant, already. And it could become one of the best restaurants in the world.”

Restaurant Aptos will open in Stirling on Friday 8 May 2026, bringing one of South Australia’s most ambitious new dining experiences to a church that dates back to 1868. The venue has been carefully shaped into a multi-level, multi-sensory restaurant, with a 16-course tasting menu, three dining rooms, native Australian ingredients, and just 14 guests per sitting.

For James, who has spent the past two years building the Aptos world, the opening is bigger than just its Mount Barker Road address. It’s about bringing people to the state.

“What we have here is, you know, fantastic, and I just want to add to it,” James said. “I want to add to the dining scene. I wanna add to the tourism industry, to the Adelaide Hills and South Australia. My main goal is just to bring people here.”

The sense of destination is at the heart of Aptos. The restaurant has been designed as a journey through interconnected spaces, with rich shadows, subtle textures and a noir-like atmosphere giving each room its own distinct feeling. Nothing has been left to chance, with the dining experience built around ambience, pace, service and detail.

James said the lead-up to opening has been overwhelming.

“A bundle of emotions,” he said. “Excited, a bit shaky right now,” he laughed. It’s been pretty wild.”

After years of planning, construction and development, James said the reality of reaching opening week has been deeply emotional.

“You have an idea you’ve been working towards for years and you get to this point and go, ‘wow’,” he said. “I mean, so much work has been put into it, but I feel like it’s just only getting started.”

He said the past few weeks, from friends and family dinners to the first day of taking bookings, have been filled with pride, nerves and tears.

The Aptos experience centres on native Australian produce, warm hospitality and the idea of slowing down. Each reservation includes the 16-course tasting menu, with five curated beverage pairings available separately.

“Restaurant Aptos is about the unexpected, being open to varied possibilities with what dining can mean and represent,” James said. “It’s a progressive journey giving permission to slow down and savour both culinary craftsmanship and warm hospitality.”

Aptos will soon be joined in the space by sister venues Bar Cruz and Bar Mary. Bar Cruz will feature a further three rooms designed around cocktail pairings and ambient conversation, while Bar Mary will focus on whisky in a single, intimate space.

For James and his team of 16, opening the doors isn’t the finish line. Not even close. There’s a much bigger, grander vision here.

“The work isn’t done,” he said. “We’re only just getting started.”
