International hospitality brand Amora Hotels & Resorts is preparing to make its South Australian debut this July with a huge $73 million hotel transformation.
Amora Adelaide will officially launch on 1 July, taking over the landmark Victoria Square property, currently Hilton Adelaide, as part of a major redevelopment that will reshape the hotel into a new five-star destination for accommodation, dining and events.
The redevelopment will be led by architectural designer company Cottee Parker, with plans for a striking new grand lobby. Across the property, including in the lobby, the design will draw from South Australia’s rich landscape, using tones and textures inspired by rolling hills, morning mist and caramel sunsets.
All 380 guest rooms will be transformed with refined furnishings and a sophisticated design direction, while the hotel’s events and function spaces will also receive a major lift. Once complete, it will feature a 660-square-metre grand ballroom and more than 2,200 square metres of function space, with multi-million-dollar, state-of-the-art audiovisual technology.
Dining will also be a key part of the hotel’s next chapter. A new ground floor brasserie-style cafe, Victoria’s Table, will join the hotel’s food and beverage offering, while Coal Cellar + Grill will undergo a major transformation. The renewed venue will continue to spotlight South Australian flavours in a more elevated setting.
Behind the transformation is a young owner with a clear vision for the family-owned hotel group. Earp Siriphatrawan, owner of Amora Hotels & Resorts, has been driving the brand’s evolution into an elevated, five-star hotel group, while protecting the independent legacy built by his family over more than two decades. Amora Hotels & Resorts already operates six luxury hotels across Australia and Asia, with Adelaide becoming the brand’s fourth Australian hotel.

While the hotel will officially become Amora Adelaide from 1 July, works will continue in stages across the property, with the full transformation scheduled for completion in mid-2027.
