Three easy air fryer recipes for busy nights: Frittata, gnocchi and Turkish pizza made fast

From a quick, veggie-packed frittata to crispy, golden gnocchi and a 10-minute Turkish bread pizza, these simple recipes are designed to save time without sacrificing flavour.

Whether you’re using up what’s already in the fridge or pulling together a speedy weeknight meal, this trio of dishes delivers maximum payoff with minimal effort.

Air Fryer Frittata

  • 1 x extra large tortilla
  • baby spinach
  • capsicum, thinly sliced
  • button mushrooms, thinly sliced
  • eggs, whisked
  • Danish feta
  • parmesan cheese
  • Mixed herbs
  • Salt and pepper
  1. Place extra large tortilla in the base of your air fryer.
  2. Add the veggies and pour over the egg mixture.
  3. Sprinkle the feta and parmesan on top and season with herbs and salt and pepper.
  4. Cook at 160C for 15 mins and serve hot!

Crispy Air Fryer Gnocchi

Serves: 3-4 (as a snack or side)

Ingredients

  • 500g shelf-stable potato gnocchi (no boiling needed)
  • 3 tbsp olive oil
  • 1 garlic cloves, minced
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp cornflour
  • 2 tbsp grated parmesan
  • Fresh parsley, finely chopped

To finish (optional but recommended)

  • Extra drizzle of olive oil
  • Pinch of chilli flakes
  • Extra herbs
  • Sauce of choice
  1. Add the gnocchi to a large bowl and toss with olive oil, garlic, paprika, salt, pepper, parmesan, and cornflour until evenly coated.
  2. Spread the gnocchi in a single layer in the air fryer basket, making sure they’re not overcrowded.
  3. Cook at 200C for 12–15 minutes, shaking the basket halfway through, until the gnocchi are golden and crisp on the outside.
  4. Transfer the hot gnocchi to a serving bowl and toss with fresh herbs.
  5. Serve immediately with a pinch of chilli flakes, extra herbs, and your sauce of choice on the side.

Air Fryer Turkish Pizza

Cook time: 8–10 minutes

  • 2 Turkish bread rounds (or 1 large, halved)
  • 4 tbsp tomato pizza sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked toppings of your choice (pepperoni, cooked chicken, mushrooms, capsicum, olives, spinach, etc.)
  • 1 tsp dried oregano or mixed Italian herbs
  1. Slice the Turkish bread in half if needed and lightly brush the cut side with olive oil.
  2. Spread a thin layer of pizza sauce over each bread base.
  3. Sprinkle over the shredded mozzarella and arrange your chosen toppings evenly.
  4. Season with dried herbs and a little extra black pepper if desired.
  5. Place the pizzas in the air fryer basket (may need to do one at a time depending on size) and cook at 200°C for 8–10 minutes, until the cheese is melted and bubbling and the edges of the bread are golden and crisp.
