Never Never Distilling Co. is heading to one of Adelaide’s most iconic culinary destinations, with the McLaren Vale distillery confirmed as a new hospitality vendor in the upcoming Market Square Adelaide development beside the Adelaide Central Market.
Set to open as part of the major new precinct, the yet-to-be-named venue will mark a significant next step for the award-winning South Australian spirits brand, bringing its premium gin and cocktail offering into the heart of the CBD. For a business that has built a loyal following from its McLaren Vale home base, the move signals a bold expansion into one of the state’s busiest and most culturally significant food hubs.
The venue is expected to deliver a distinct Never Never experience shaped by the rhythm of the Market itself, from morning trade through to late-night drinks. Guests can look forward to “crisp pre-show G&Ts before a night at Her Majesty’s, bold breakfast Bloody Marys for early market wanderers, bright sidewalk spritz moments spilling into the afternoon sun, and late-night summer martinis stirred with precision once the sun goes down.”
Co-Founder and Managing Director George Georgiadis said the opportunity to join the precinct carried particular weight because of the Market’s place in Adelaide’s identity. “Adelaide Central Market is one of those rare places that defines a city,” he said.
“It’s where chefs shop, where families gather on weekends, and where the best produce in the state sits shoulder to shoulder with passionate traders, many of whom have been a recognisable part of our food culture for generations,” George says.
“To be invited into that community is incredibly special for us,” he continues. “From a hilltop in McLaren Vale to a corner at the Adelaide Central Market, we’re excited to bring the next horizon of our hospitality ambition into view.”
For more than 150 years, Adelaide Central Market has been a focal point for food, community and culture in South Australia, and Market Square Adelaide is being positioned as a major new chapter in that story. The broader development will combine dining, retail, residences and public space, extending the Market’s reach while drawing even more people into the city.
Never Never Co-Founder and Brand Director Sean Baxter said the fit felt natural from the beginning. “We’ve been bubbling with excitement ever since we first sat down with the Market Square team to begin building out what the Never Never experience on site is going to be,” he said.
