Prospect’s food scene is heating up, with another exciting addition to the bustling dining strip bringing big bowls of flavour, plenty of choice and an extended range of ingredients to explore.
Adelaide favourite 18 Street Hot Pot has officially opened its newest restaurant on Prospect Road, adding to its growing network of eight locations across the city.
The Prospect location has been in the works for around six months and is finally bringing the beloved build-your-own experience closer to locals.

Co-owner Tom, who also operates 18 Street Hot Pot locations in Glenelg, Henley Beach and Arndale, said Prospect had been on the team’s radar for some time.
“You can see this very huge difference in Prospect in these five years, a lot of new business coming in, including a lot of restaurants,” said Tom.
With plenty of schools nearby and a growing community of young food lovers, Tom said customers had been eagerly waiting for 18 Street Hot Pot to make its way to Prospect.
“They always ask us about when they’re going to have one.”
“And we promised them, and now we’re open.”

While the vibe inside is very familiar and similar to its sister locations, this one has a little something extra.
The Prospect venue is introducing an expanded ingredient selection, making it the perfect excuse to try something a little different. Featuring a bigger fridge display with more room for ingredients, customers can explore additional seafood and noodle varieties, with even more options to mix and match.
Prospect is the first location to trial the expanded range, with plans to potentially roll out the new additions across other stores depending on customer feedback.

For anyone who hasn’t experienced 18 Street Hot Pot before, the concept is simple. You choose exactly what goes into your bowl, creating your own combination of ingredients to suit whatever you’re craving.
Whether you’re in the mood for a big bowl loaded with seafood, something packed with vegetables or just a smaller meal, their selection of fillings is constantly updating.
“So every time you come, there’s always something new for you to try.”
Tom said the new Prospect restaurant follows a similar roadside design to the Henley Beach location, with an eye-catching position along the busy dining strip, right next to Yo-Chi.
And the good news keeps pouring in for Prospect locals.
The team is planning some exciting promotions before the end of the year, along with potential discounts specifically for students who present their student ID or arrive in school uniform. While the details are still being finalised, the student offers are expected to be exclusive to the Prospect location.
The opening also marks another milestone in 18 Street Hot Pot’s continued Adelaide expansion, with Tom confirming that another location in Gillies Plains is already in the works for 2027.
For now, though, Prospect locals have a new reason to grab their friends, build their dream hot pot bowl and discover just how many delicious combinations they can create.
