There’s a new way to do hot pot in Adelaide, and this one involves a conveyor belt, bubbling broth and plenty of wagyu.
One Hotpot has opened on Gouger Street in the heart of Chinatown, bringing together traditional Chinese hot pot and a sushi-train-style dining experience, with an entirely halal menu.
Behind the new restaurant is the team connected to 1915 Lanzhou Beef Noodles, another Gouger Street favourite known for its hand-pulled noodles and Chinese comfort food.
Co-owner Chris Wu said the idea came from recognising a gap in the local dining scene, with Muslim diners looking for an authentic Chinese hot pot experience that catered to their dietary requirements.
“It’s an authentic Chinese hot pot where you cook all the ingredients that you pick,” he said.
The process is simple. Diners scan a QR code to select their preferred broth, which is delivered to their seat. From there, they can pick and choose ingredients from the passing conveyor belt, adding them to the simmering broth as they go.
Much like a sushi train, each plate is colour-coded according to price, with three different price points ranging from $1.99 to $3.99. At the end of the meal, the plates are counted to calculate the total.
For Chris and the team, sourcing the right meat was a particularly important part of developing the concept.
“The meat quality in hot pot is very important,” Chris explained.
“We tried our best looking around for meat suppliers, and it took us a few months to find the best meat quality that we can supply to customers.”
“Everything is local. The lowest quality of meat in the store is Angus, and everything beyond that is wagyu. And at a very fair price.”
There are currently five broth options to choose from, including spicy chilly oil, mildly spicy red sour, and non-spicy varieties featuring tomato and mushroom.
The attention to detail continues through the venue itself, which was designed by APD Interior Architecture.
One Hotpot also offers booths and private dining rooms for groups who prefer a more traditional shared hot pot experience.
Here, customers can order larger plates of their favourite ingredients to enjoy together, making it an option for everything from casual dinners to birthday celebrations.
The restaurant adds another new dining experience to Gouger Street, giving Adelaide diners a chance to enjoy Chinese hot pot in an interactive setting, with a strong focus on halal ingredients and quality meat.
