Two chefs and two very different food cultures are coming together for one seriously flavour-packed night at Lola’s Wine Bar in Norwood this October.

MasterChef alum Sav Perera will join Lola’s chef David Vargas for a one-night-only four-course dinner on Thursday, October 8th, bringing the bold flavours of Sri Lanka and Colombia to the table.

Priced at $65 per person, the dinner will explore the similarities and contrasts between the two cuisines, with plenty of spice, colour, texture and fresh ingredients packed into each course.

The feast will kick off with a selection of snacks, including a spiced tuna fish croquette with grapefruit aioli and spiced chicken liver pâté toast with dressed spring greens and tangerine marmalade.

From there, the menu moves into dishes including pickled rockmelon with stracciatella and green chilli nam jim, Colombian pan de bono, and a chicken and rice empanada served with ají and lime.

For the main course, guests can expect banana-leaf steamed barramundi with a mustard and coconut rub, seasonal citrus sambal and saffron rice, alongside fried plantain with braised brisket and hogao sauce.

Dessert will bring the four-course feast to a sweet finish with a generous serving of tres leches cake topped with meringue.

“Both Colombian and Sri Lankan food are all about big flavours, fresh ingredients, spice and bringing people together around a table,” said David. “There’s so much crossover, but also so many differences that make this collaboration really exciting. Sav is an incredible chef, and we can’t wait to see what happens when we put our two styles together.”

The dinner will also mark Sav’s return to the hospitality group following the success of her previous collaboration at Mother Vine.

“We’re so excited to welcome Sav back to one of our venues after such a successful sold-out dinner at Mother Vine,” shared Olivia Gorman, Lola’s co-owner and general manager. “It was such a special night, and the response from our guests was incredible. We knew we had to find an opportunity to bring Sav back, and Lola’s felt like the perfect place to do it. The combination of Sav’s Sri Lankan flavours with David’s Colombian influence is going to be something really special, and we can’t wait to share it with our guests.”

With two chefs bringing their own backgrounds, techniques and personalities to the kitchen, the night promises a menu that moves between Sri Lankan spice and Colombian punch without sticking to the usual dinner-party formula.
