Kent Town will soon welcome a long-awaited micro-distillery packed with personality and years of passion behind it, Pete’s Distilling is led by Peter Vujic, a familiar face in the city’s hospitality world.
The venue will bring together tradition and innovation, specialising in small-batch creations inspired by Pete’s Serbian heritage and his decades of experience in hospitality.
At the heart of the lineup is rakija, the high-proof fruit brandy celebrated across the Balkans. At Pete’s Distilling, it will be reimagined through a modern lens with coffee, salted caramel and cinnamon varieties, alongside a bright organic limoncello. Vodka, gin and non-alcoholic options will also feature on the drinks list.
Every spirit has been developed by Pete himself, drawing on his years in hospitality and a deep interest in flavour and technique. He taught himself distilling from the ground up and has focused on crafting each recipe using local produce while staying true to traditional Serbian methods. Many of the core spirits were refined at home over weekends, with Pete gradually perfecting the small-batch lineup that will form the foundation of the distillery.
While Pete’s Distilling may be a new name, Pete has long been part of Adelaide’s dining scene. Alongside his family, he built a strong following through Kafana on Peel Street, a venue known for its chargrilled meats, lively atmosphere and traditional Serbian hospitality. After Kafana closed during COVID, Pete turned his focus to Silver Brewing Co. on Gouger Street, before ultimately deciding it was time to create something really personal.
The Kent Town cottage that will house Pete’s Distilling Co. is currently in its final stages of transformation, with what will serve as a teaser ahead of the completed venue reveal. Pete and the team are working tirelessly to finish the space, pushing through the final build and fit-out to bring the vision to life.
Pete tells us the finished design will lean into an art deco, art nouveau aesthetic layered with a moody speakeasy-style vibe, creating a rich, intimate setting for tastings, cocktails and late-night gatherings.
“Inside, it’s going to feel like a speakeasy, dark, elegant and intimate. Because we’re in an old Victorian cottage, it’s been a challenging space to transform,” Pete says.
Pete says the aim is now to launch towards the end of the month, but the final date is still yet to be locked in.
Drinks will sit firmly at the centre of the experience, with the distillery producing a focused range of house-made spirits including coffee rakija at 33 per cent ABV, limoncello at 33 per cent, and salted caramel rakija at 33 per cent, with a coconut rakija currently in development. A citrus-forward gin, vodka and a signature house rum will also be produced on site, complemented by tastings and cocktails designed to showcase each spirit. Guests will also be able to try Pete’s own Shiraz sourced from Langhorne Creek.
“The menu and drinks are all designed so people can stay, try everything and enjoy the space,” Pete says.
Food will play a major supporting role with an articulate eight-dish sharing menu in development. The offering will include pizza, burgers, traditional ćevapčići, a one-kilogram aged wagyu rump and lobster pasta, all designed for sharing at the table. “The menu will be succinct, but we’re doing it properly,” Pete says.
Sundays are also set to become a feature, with plans for a weekly Viking Feast and the possibility of relaxed Sunday sessions with DJs and laid-back vibes.
Blending old-world craft with contemporary flair, Serbian hospitality and a richly styled interior, Pete’s Distilling Co. is shaping up to be one of Adelaide’s most anticipated openings. Once complete, the Kent Town venue is set to become a destination for tastings, cocktails, shared feasts and late-night conversations.
